A quick and simple starter !
Ingredients: for 2 people
200 g Fusilli
1 red pepper
1 carrot
1 onion
1 clove of garlic
Olive oil to taste
Salt to taste
Pepper as needed
Basil to taste
Method:
Put the water for the pasta to boil
Cut the pepper, carrot and onion into cubes
In a pan, add a drizzle of oil with the garlic clove
Add the pepper, carrot and onion cubes
After about 5 minutes, blend the mix of pepper, carrot and onion, add the spices and leave to cook for another 10 minutes on low heat
When the pasta is cooked, transfer it into the pan with the pepper cream and stir in a little cooking water.
A sprinkling of grated parmesan and off you go!
